Ingredients
3 cups bread flour
1 packet (2 1/4 tsp) instant yeast
1 1/2 tsp salt
1 1/2 cups water
Oil
Directions
1. In a large bowl, combine flour, yeast, and salt. Slowly add the water and stir until just blended. The dough will be shaggy.
2. Cover the bowl with plastic wrap and let it sit in a warm place for 4 hours.
3. When the dough is done rising, lightly oil a work surface. Turn the dough on to the work surface and fold it onto itself a couple times. Return to bowl and let it rise for 30 more minutes.
4. Put a 6-8 quart cast iron skillet in the oven and preheat to 450 degrees, allowing the skillet to heat up in the oven.
5. When the dough is done rising and the oven is preheated, remove the skillet from the oven and carefully place the dough, seam side up(yes, seam side up!) in to the skillet. Shake the skillet to evenly distribute the dough, cover skillet with lid or foil, and bake for 30 minutes. Remove the lid, then bake for 10-15 more minutes.
6. After the bread is done baking, remove from pan and let it cool.
