Ingredients(Makes 1 loaf)
3 eggs
1 1/2 tsp vanilla extract
1/4 cup milk
1 1/2 cups all purpose flour, sifted
3/4 cups sugar
1 tsp baking powder
1/4 tsp salt
1 Tbsp grated lemon zest
3 Tbsp poppy seeds
1/2 cup plus 5 Tbsp unsalted butter, softened
1/4 cup lemon juice
1/3 cup sugar
Directions
1. Preheat oven to 350 degrees. In a small bowl, whisk together the eggs, vanilla, and milk. Set aside.
2. In a large bowl, mix the flour, sugar, baking powder, salt, lemon zest, and poppy seeds until combined.
3. Add the softened butter and half of the egg/milk mixture to the flour mixture and stir until moist. Add in the rest of the egg/milk mixture until combined.
4. Spray or butter a bread pan. Sprinkle a light coat of flour to the inside of the pan.
5. Pour the bread mixture into the bread pan. Bake for 50-55 minutes.
6. While the bread is baking, add the lemon syrup ingredients to a small saucepan and bring to a boil, constantly stirring until the sugar dissolves.
7. When the bread is done baking, let cool for 5-10 minutes. Lightly poke holes in the top of the loaf using a fork or a toothpick.
8. Slowly pour the lemon syrup over the loaf. Let the bread cool for at least 15-20 minutes so the syrup can soak into the bread.
This looks great! I have never made lemon poppy seed bread before, but it's definitely on my to-do list!
