Ingredients
3 avocados, skinned, deseeded and chopped into chunks
1/3 cup sundried tomatoes in oil, drained and chopped
3 TBSP finely minced red onion
3 TBSP minced fresh cilantro
Eggroll wrappers
Olive Oil
Directions
1. Preheat oven to 400 degrees. Grease a baking sheet with olive oil.
2. In a large bowl combine avocados, sundried tomatoes, onion, and cilantro. Gently mix with a wooden spoon.
3. Scoop a spoonful of the avocado mixture onto the center of an eggroll. On the back of the eggroll package, there should be a guide on how to fold the eggroll. Follow those directions. Repeat.
4. Arrange the eggrolls on the baking sheet. Brush every eggroll liberally with olive oil.
5. Bake for 10 minutes, flip, and bake for 10 more minutes. Or until crispy. Instead of baking, these are safe to deep-fry also.
Serve with ranch dressing! Our favorite ranch to serve this with is "The Bomb Diggity" Jalapeno Ranch, because we like spice. :)
