Strawberry Clouds

Strawberry Clouds- tortilla pastries filled with a strawberry cheesecake mixture and fresh strawberries. They are coated in powdered sugar which transforms the baked tortilla into a melt-in- your- mouth sweet dessert. | Sammi Sunshine
Ingredients- Makes 10-12 Clouds
1 8oz package cream cheese
1/4 cup sour cream
1 Tbsp sugar
1 tsp vanilla
2 - 2 1/2 cups strawberries, cut into small bite size pieces
10-12 fajita size tortilla shells
3 Tbsp melted butter
1/4 cup powdered sugar

Directions
Preheat your oven to 425 degrees. In a medium bowl, mix the cream cheese, sour cream, sugar, and vanilla until smooth.

 Gently fold in about 3/4 of your sliced strawberries(The rest of the strawberries will be for the top of your clouds.)

Taking one tortilla at a time, place about 2 Tbsp of the strawberry mixture on the bottom third of the tortilla. Now, I am going to show you how to roll the tortilla, so the mixture doesn't get all over the place! I learned this neat trick by making about a trillion of my freezer breakfast burritos.

 Fold the bottom of the tortilla over the mixture...

 Then, fold the two sides in toward the center...

 And roll the tortilla up from the bottom, just like you're making a burrito!

 Place seam side down, and your little burrito will stay secure!
Spray a baking sheet with non-stick or coat with butter and place each burrito(they're not clouds yet!) on the baking sheet, seam side down. When all the burritos are on the baking sheet, bake them in the oven for 7 minutes, flip, then bake for 7-8 more minutes. Each side should be a golden brown color.


 While the burritos are baking, melt the 3 Tbsp of butter in one bowl and put the powdered sugar in another.

 After the burritos are done baking, allow to cool for 3-5 minutes, you don't want to burn your hands! Next, coat each one in butter, then coat in powdered sugar. Ta-da! You have now created clouds!


When you are ready to serve, top with the rest of your cut up strawberries, and enjoy your tasty cloud treat!

Roll your tortilla up from the bottom, like you're making a burrito. Place each burrito, seam side down, on a baking sheet sprayed with non stick. (I learned how to fold a burrito from making about a trillion of my freezer breakfast burritos)

4. Bake burritos for 7 minutes, flip, then back for 7-8 more minutes. Each burrito should be golden brown on each side.

5. While the burritos are baking, melt the butter in a bowl, and put the powdered sugar in another bowl.

6. After the burritos are done baking, allow to cool for 3-5 minutes. After they are cooled, coat each one in butter by placing it in the bowl with butter and rolling it around. Then, coat in powdered sugar using the same method. They have now transformed into clouds!

7. When you are ready to serve, top each cloud with the rest of the strawberries and enjoy your tasty cloud treat!
