Ingredients
1 9 inch pie crust
3 medium tomatoes, thinly sliced
1 tsp salt
1 small onion, chopped into tiny pieces
1 tsp black pepper
1 Tbsp olive oil
2 Tbsp fresh chopped basil
1/2 cup grated cheddar cheese
1/2 cup grated mozzarella cheese
1/4 cup mayonaisse (I use only Hellmans)
Directions
1. If needed, bake pie crust according to instructions.
2. Preheat oven to 350 degrees. Line a baking sheet with paper towels, spread tomato slices on the paper towels. Sprinkle the tomatoes with salt and cover with another layer of paper towels. Let them set for about 15 minutes, to dry up as much as possible.
3. Layer tomatoes in the pie crust. Layer some chopped onion on top. Repeat until crust is filled.
4. Sprinkle the top with the pepper and basil. Slowly drizzle the olive oil on top as well.
5. In a small bowl, mix the cheeses and mayonaisse together. Spread on top of tomato pie until completely covered.
6. Bake pie for 40 minutes. When it's done, pull it out of the oven and let rest for 5-10 minutes before slicing.
