Dijon Chicken

Ingredients
2 boneless, skinless chicken breasts
1/2 cup dijon mustard
1/4 cup real maple syrup
1 TBSP rice wine vinegar
Salt & pepper
2-3 tsp fresh rosemary
1 TBSP cornstarch

Directions
1. Preheat oven to 425 degrees. In a small bowl, whisk together mustard, syrup, and vinegar.

2. Place a spoonful of the mixture on the bottom of a lined baking dish. Spread to cover evenly.

3. Place chicken breasts in baking dish. Season with salt and pepper, if desired.

4. Pour the rest of the mustard/syrup/vinegar mixture on top of the chicken.

5. Bake for 20-30 minutes, or until the chicken is cooked through.

6. Remove the chicken from the pan. There will be juices in the pan, add the cornstarch to those juices and whisk until thickened. This will create a sauce. Stir in the rosemary.

7. Pour the sauce from the pan onto your chicken. Serve.
