Cinnamon-Swirl Breakfast Bread Pudding

Ingredients:
4 eggs
1 1/2 cups milk
3 Tbsp. brown sugar
1 tsp. vanilla extract
1 tsp. cinnamon
1/2 loaf day-old bread, cut into cubes(I've used the cheapest white bread from the store, and it works great!)
1/4 cup pecans, chopped(optional)
nonstick cooking spray
maple syrup

Directions:

1. In a large bowl, whisk eggs and milk. Add the brown sugar, vanilla extract, and cinnamon. Whisk until completely incorporated.

2. Stir the bread and pecans into the egg mixture.

3. Coat an 8x8 inch baking pan with nonstick cooking spray.

4. Pour the bread pudding in the pan, and cover with foil. Let sit in the refrigerator at least one hour or overnight.

5. Preheat oven to 350 degrees.

6. Bake the bread pudding, covered, for about 30 minutes.

7. Remove the foil and bake and additional 10 minutes, until browned.

8. Serve with maple syrup
