To achieve a squishy "bakery" cinnamon roll, substitute 1 cup all purpose flour for 1 cup pastry flour*
Ingredients (makes 12 rolls)
1 cup milk
1/4 cup butter
3 cups all purpose flour
1/4 cup sugar
1/2 tsp salt
2 1/4 tsp instant yeast
1 egg
Cinnamon Sugar Ingredients
1/2 cup sugar
1/2 cup packed brown sugar
3 Tbsp. ground cinnamon
1/2 cup butter, softened to room temperature
Directions
1. Combine the butter and milk in a microwave safe bowl. Heat in microwave for 30 seconds, or until butter is melted and milk is warm. Set aside.
2. In a separate bowl, mix together the flour, sugar, and salt. Set aside.
3. In a large bowl, mix together yeast and milk/butter mixture until combined.
4. Add the egg. Using a spoon, slowly stir in the flour mixture. Mix until a dough begins to form into a ball. If the dough is too wet, add flour one tablespoon at a time until a ball begins to form.
5. Remove the dough from the bowl and turn onto a lightly floured surface. Knead for about 5 minutes. Return the dough to the bowl. Cover with a damp cloth and let it set for about 10 minutes.
6. Meanwhile, stir together the cinnamon sugar ingredients(but not the butter). Set aside.
7. When the dough is ready, turn onto a floured surface. Roll the dough into a large rectangle, about 12x9 inches.
8. Spread about 1/2 cup butter on the dough, then evenly sprinkle the cinnamon mixture on top of the butter. Lightly press the sugar into the dough.
9. Beginning at the 14 inch edge, tightly roll up the dough. Pinch the final seam together.
10. Using a sharp knife, cut the dough into rolls. Place in a greased 13x9 inch baking pan. Cover with a damp towel and set the rolls in a warm place to rise, about 25-30 minutes.
11. Preheat oven to 350 degrees. When the rolls are done rising, bake them for 15-20 minutes, or until golden.
After you pull the cinnamon rolls out of the oven, frost with icing.
